645DF+ in-camera double, triple exposures?

Hello,

I'm happy to work in layers in Photoshop to create double and triple exposures in post, but -- just curious -- could I shoot in-camera double and triple exposures with the 645DF+? How about in-camera HDR?

Something like this would have to be a feature of the Digital Back that is put on the camera, not the camera body itself.
Currently, with all CCD based cameras (to my knowledge) multi-exposure is simply not a possibility due to the nature of the technology.
So, to answer your question, doing "multiple exposures" "in camera" is simply not possible. Bracketing and then combining in post is the only option and frankly, a much more dependable way to achieve HDR.
